How does a proofing cabinet work?

1. Cooling of dough:

The cabinet quickly cools the dough to a temperature of about 0°C to 4°C, depending on the type of dough. At this temperature, the action of the yeast slows sharply, which almost completely stops the dough from rising.

2. Maintaining optimal conditions:

The cabinet maintains a constant, controlled temperature and humidity. The humidity is often around 75-85% to prevent the dough from drying out.

3. Pre-programming and rise time control:

Modern proofing cabinets have programmable settings. This allows the user to set when the dough begins to rise again.
